  • Onion – 2 medium (200 g)

  • Ginger – 10 g
  • Roasted coriander seeds – 1 tsp (3 g)
  • Roasted white sesame seeds (Safed Til) – 2 tbsp (18 g)
  • Fresh coriander with stems – 20 g

For Tambda Rassa

  • Oil – 30 ml (2 tbsp)
  • Prepared Kolhapuri masala paste – 3 tbsp (60 g)
  • Masoi Kolhapuri Ghati Masala – 1 tbsp (10 g)
  • Traditional mutton stock – 500 ml
  • Reserved cooked mutton pieces – 2–3 pieces
  • Salt – 1 tsp (5 g)
  • Fresh coriander, finely chopped – 5 g

Step 1: Marinate the Mutton

Add 250 g mutton, Β½ tbsp ginger-garlic-green chilli paste, Β½ tsp turmeric powder and 1 tsp salt to a bowl.

Mix thoroughly and marinate for 1 hour.

Step 2: Prepare the Traditional Mutton Stock

Step 3: Slow-Cook the Mutton

Lower the flame completely.

Cover the handi with a steel plate filled with hot water.

Cook for 20–25 minutes on low flame.

Remove the plate and add 150 ml warm water.

Cook for another 15–20 minutes on low flame.

Repeat this process until the total water reaches 500 ml and the mutton is 80–90% cooked.
