🥥🌶️ Malvani Style Veg Curry

(Malvani Masala Special – Vegan & Gluten-Free)

🛒 Ingredients

Vegetables:

  • 1 cup cauliflower florets

  • 1 cup potatoes (peeled & cubed)

  • 1 cup green peas (fresh or frozen)

  • ½ cup carrots (sliced)

  • ½ cup capsicum (optional)

For Curry:

  • 1 medium onion (finely chopped)

  • 1 medium tomato (finely chopped)

  • 1 tsp ginger-garlic paste

  • 2-3 tbsp Malvani Masala (adjust to taste)

  • ¼ tsp turmeric

  • 1 tsp red chilli powder (optional, for extra spice)

  • Salt to taste

  • 2 tbsp oil

  • 1½ cups water (adjust for consistency)

  • Fresh coriander for garnish

  • 2 tbsp fresh coconut or desiccated coconut (optional, for richness)


🔪 Instructions

Step 1: Prep the Vegetables

  1. Boil or steam cauliflower, potatoes, peas, carrots until 90% cooked. Don’t overcook — they’ll cook further in curry.

  2. Keep aside.


Step 2: Make the Curry Base

  1. Heat oil in a pan. Add chopped onions and sauté until golden.

  2. Add ginger-garlic paste. Sauté until raw smell goes.

  3. Add chopped tomatoes, turmeric, Malvani masala, and red chilli powder. Cook until oil starts separating.

  4. (Optional) Add coconut for a richer texture and cook for another 2 minutes.


Step 3: Cook the Curry

  1. Add the boiled veggies into the masala mix. Stir gently to coat all veggies.

  2. Add water, salt and let it simmer for 5-10 minutes until everything blends well.

  3. Adjust consistency – it should be thick but pourable.


Step 4: Garnish & Serve

  1. Garnish with fresh coriander.

  2. Serve hot with chapati, bhakri, jeera rice, or steamed rice.


💡 Tips:

  • Add coconut milk at the end for a creamy twist.

  • You can swap or add veggies like baby corn, brinjal, or paneer for variation.

  • This curry pairs amazingly with Masoi’s Kolam Rice or Handmade Bhakri.
